It is officially that time of year where the after-school snack is one of the top priorities of the day- especially for those kiddos! As always, it can be such a task trying to get a good, healthy, crowd-pleasing after-school snack in the rotation.
You need something quick, easy and preferably something you can make ahead and leave in the fridge for those kiddos barreling through the door!
Here is a super easy, fresh and nutritious Avocado Dip from the Pioneer Woman. You can make this ahead, and serve it with pita chips or even fresh-cut vegetables.
Even if you don’t have kids to feed after a long day at school, this would be a great snack to keep around the house. It is always a good idea to have a healthy snack ready and on hand. It makes it a whole lot easier to grab a healthy snack, versus reaching for an unhealthy snack or hitting a drive-through on your way home from work.

Ingredients:

3 ripe avocados, peeled and pitted

1/2 c. whole milk Greek yogurt

1/3 c. packed basil leaves

2 green onions, sliced

1 tsp. fresh lemon zest

3 Tbsp. fresh lemon juice

1 garlic clove, mined
-
1 1/4 tsp. kosher salt
-
1/4 tsp. cayenne pepper

Pita chips, to serve

Cut raw vegetables, to serve
Instructions:

1- Combine the avocados, Greek yogurt, basil, green onion, lemon zest, lemon juice, garlic, salt, and cayenne and puree in a blender until smooth. Use a rubber spatula to scrape down the sides as needed.

2- Spoon the avocado dip into a serving bowl, serving with pita chips and cut vegetables.
