Wow. We have a delicious and timeless recipe for you all today. This is a good old fashioned Greek Salad. There is nothing super frilly or overdone about this recipe — it is just fresh and yummy.
This recipe falls under the Mediterranean Diet, which we recommend following. We wrote a whole blog and a section in our Healthy Aging Guide (pg. 11-15) that goes even deeper into the Mediterranean Diet and its benefits.
To make it even better… It only takes about 15 minutes to chop everything and put it together.

Serves: 6 People

Ingredients:
- 1 Medium red onion, sliced thinly into half circles.
- 4 Medium juicy tomatoes, sliced into bite-sized pieces.
- 1 English cucumber, sliced into half circles.
- 1 Green bell pepper, cored and sliced.
- 1 handful pitted kalamata olives (or black olives)
- 1 ½ tsp dried oregano
- Kosher salt
- ¼ Cup extra virgin olive oil
- 1-2 Tbsp red wine vinegar
- 1 (7oz) Block Greek feta cheese in brine
Instructions:
1. Shock the onion: If you’d like to mellow the onion’s raw taste, fill a small bowl with ice water. Add about 1 teaspoon of red wine vinegar to the water, then add the sliced onion. Set aside to soak for 10 minutes or so.
2. Combine Veggies: Place the tomato, cucumber, bell pepper, and olives in a large serving dish. Remove the onions from the water and add to the dish with the rest of the vegetables.
3. Season: Sprinkle the vegetables with ¾ teaspoon of oregano and a pinch of kosher salt. Add the oil and vinegar (to your liking) then give everything a gentle toss.
4. Finish & Serve: Top the salad with slabs of feta and sprinkle with the remaining ¾ teaspoon of oregano and enjoy!
