Summer is here and the days are warm!!
We can all probably agree that watermelon is the ultimate summer snack. An ice cold wedge of watermelon after a day out in the heat? There is nothing like it! It is yummy, nostalgic and full of health benefits!
Watermelon is rich in antioxidants including Vitamin C and Vitamin A, which both fight free radical damage.
Vitamin C is one we talk about a lot! Vitamin C works double-time as an antioxidant and an immune enhancer. Because it is a water-soluble vitamin our bodies don’t store it, making it even more important to eat foods rich in vitamin C.
As a little bonus, Vitamin C helps with collagen production which is incredible for your skin, and helps with preventing sun damage. The perfect little bonus during the sunny summer months!
Vitamin A is incredible at protecting against UV damage as well as maintaining the health of your cells. It is anti-inflammatory, supports immunity, boosts bone health and can help with tissue repair.
If you want a little more than just raw watermelon, here is a delicious watermelon, feta and mint salad that you are going to LOVE this summer.
WATERMELON SALAD WITH FETA
Honey-Lime Dressing
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 to 2 tablespoons quality extra virgin olive oil
- pinch of salt
For The Watermelon Salad
- 1/2 watermelon peeled, cut into cubes
- 1 English or Hot House cucumber, cubed (about 2 cupfuls of cubed cucumbers)
- 15 fresh mint leaves, chopped
- 15 fresh basil leaves, chopped
- 1/2 cup crumbled feta cheese, more to your liking
Instructions
- Make the dressing: In a small bowl, whisk together the honey, lime juice, olive oil and pinch of salt. Set aside for a moment.
- Make the Salad: In a large bowl or serving platter with sides, combine the watermelon, cucumbers, and fresh herbs.
- Finish and Serve: Top the watermelon salad with the dressing and gently toss to combine. Top with the feta cheese and serve!
