WATERMELON SALAD WITH FETA & CUCUMBER

Is there anything more refreshing than watermelon on a hot day?? 

Lucky for us… Watermelon is delicious, AND it also provides some incredible benefits! 

 

Hydration: 

C’mon.. Water is in the name! Watermelon has a very high water content of 91%. This helps with hydration, digestion and detoxification! 

 

High in Potassium and Magnesium: 

Potassium acts as an electrolyte and promotes circulatory health. It also helps manage blood flow and hydration levels and allows oxygen to reach cells! 

Magnesium reduces water retention in the gut to reduce bloating and water weight. 

 

Skin Health: 

Watermelon is one of the most antioxidant-rich foods available! It is high in Vitamin A and Vitamin C! 

Vitamin A: Maintains cell health and protects from UV damage. 

Vitamin C: Boosts collagen production and helps prevent sun damage.

Whether you are putting it in a cooler and bringing it with you to the pool or making it at the beginning of the week for an easy afternoon snack- you will probably be fighting for seconds. 😉

 


 

Watermelon Salad with Feta and Cucumber

For The Honey-Lime Dressing:

  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons quality extra virgin olive oil, pinch of salt

For The Watermelon Salad:

  • ½ watermelon peeled, cut into cubes 
  • 1 English or Hot House cucumber, cubed (about 2 cupfuls of cubed cucumbers)
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • ½ cup crumbled (or cubed) feta cheese, more to your liking

Instructions:

  • Make the dressing: In a small bowl, whisk together the honey, lime juice, olive oil and pinch of salt. Set aside for a moment.

  • Make the Salad: Combine the watermelon, cucumbers, and fresh herbs in a large bowl or serving platter with sides.

  • Finish and Serve: Top the watermelon salad with the dressing and gently toss to combine. Top with the feta cheese and serve!
